The best advice I have for anyone travelling with small children, is to plan a vacation after your vacation. That is exactly what we did. After three days at Disney, we travelled over to Sebastian FL (on the Atlantic coast, just south east of Orlando) and spent two days relaxing on the beach at my aunt Linda and Uncle Steve's condo. Not only did my aunt cook for us and give us a free place to stay (waterfront!), but she entertained our kids! She had "Florida" books made up for them with coloring pages, educational pages, learning activities. She also had crafts for them to do and beach toys/towels/ clothes for them. Do you think she was excited to see them?!! We were so excited to see her too. The beach was a little windy the first day, but the kids collected lots of shells and used them to make necklaces and bracelets.
The other highlight that first day was watching the manatees right outside their condo. We went down to the water and saw about 30-40 sitings of 5 different manatee, some just ~3 feet away from where we were standing on the dock! That's something the kids don't get to experience in Missouri!
The second day on the beach wasn't quite as windy (because we found the "prime" spot!) and the kids really loved making sand castles, blowing bubbles, burying themselves, jumping in the waves, and "dancing". With such a beautiful, perfect day, we didn't want to leave, but we knew "real life" was calling us back.
